We did NOLA last year, and included a trip to Natchez MS which is another one for this list. Also, I’d add Asheville NC – you can’t miss the Biltmore House all decorated for Christmas. We’ve also done Estes Park, CO which looks like a Christmas Wonderland (although you mostly feature destinations in the South, don’t miss this one!)
